Old Hickory Fillet Knife

The Old Hickory knives were first introduced in 1924. They are still being produced today, more or less the same way they were a hundred years ago, using artisan processes.

All Old Hickory knives feature a hardwood handle secured with brass compression rivets.

The Old Hickory Fillet Knife #417 features a 420 stainless steel blade giving you a better control over rust issues. It has a slim 6.25 inch blade, making it effortless to fillet fish or to cut any other meat with no bones.
